Takeshi Nishikawa

Takeshi Nishikawa is the founder and CEO of Snow Crane, a Japanese-inspired dessert and beverage brand rooted in the culinary traditions of his native Mie Prefecture, Japan, and the seasonal abundance of the Mid-Atlantic. Drawing on craft, season, place, and tradition, Snow Crane operates through farmers markets, pop-ups, and private events across the Washington, DC region — bringing finesse-driven Japanese confectionery and soft-serve to unexpected places and people.

Takeshi brings over 20 years of Michelin-level culinary experience to his work, including his tenure as Culinary Director at Rose’s Restaurant Group, where he helped shape the programs at Pineapple and Pearls and Extra Fancy. His sourcing philosophy is grounded in direct relationships with Maryland and Virginia farmers, particularly single-origin dairy producers whose work he considers inseparable from the finished product.

Through Snow Crane, Takeshi is building a new category of Japanese-American craft dessert – one that honors both the precision of Japanese technique and the terroir of the place he now calls home.
